When the quarantine in my area is over I want to get started on a new visual media project using only my Note 10. I've noticed people doing pretty stellar work with iPhones only but I'm fumbling around trying to get a less lossy video format from my Note 10. I've tried a few free apps and the stock camera app but its all compressed .mp4's.
Anyone know a good uncompressed video recording app, maybe one that does 1:1 as well?

I doubt you can get any better than the stock camera app.

On Android, most OEMs are not exposing their camera hardware using the proper Google APIs, so it's extremely difficult for 3rd party developers to properly optimize their camera apps. Samsung is one of these OEMs. Ie. the well-regarded pro app Filmic Pro (that is used by a lot of professionals on their iPhones), cannot even support the tele lens on Samsung phones because Samsung doesn't use/expose the Google Camera API properly.

After searching for a while I did just end up buying Filmic Pro and the additional settings in-app purchase. You are correct on Filmic being unable to access the tele lens, luckily I won't need it for the this project.
Kind of a bummer that hardly anyone uses the APIs correctly. I enjoy Android for its open filesystem and my Note 10's DeX, but I am annoyed how apps; free or paid, can hardly take advantage of the hardware.

Blame it on Google as well for being slow in adapting the stock APIs to the hardware.

Eg Xiaomi on Android One MI A1 was forced to put in their own camera app because Google own camera app took so long to support dual hardware lens.

What's wrong the stock camera app and enabling high efficiency video (HEVC) setting?
I want to shoot primarily in b/w 1:1, editing a HEVC video would introduce unwanted artifacting due to its lossy filetype.
While AVCHD and MOV are not entirely immune to artifacting while editing, they are a preferred choice.
