Is it possible to move a picture out of camera roll and into another album? I want the picture to NOT appear in camera roll anymore. I just want to see it in the new album.

Nope it is not possible. The original picture will stay in Camera Roll and the photo showing up in the new album (which you've ADDED to the photo album) is just a "shortcut" to the original picture.

Hmm.... that is very disappointing. With previous photo sync in iTunes, I was able to add photos that are not added in Camera Roll.

I like to keep Camera Roll tidy and only filled with pictures taken with the Camera. I have a few wallpapers I downloaded from the internet. Is there a way to put these wallpapers in a separate album completely outside of Camera Roll?

Download them to your pc/mac, add them to a folder and sync, then delete them from the Camera Roll.

The only way is to import the pictures from your Camera Roll to your computer like Jare said. You can't just use the iOS 5 feature to organize photo album if you want your Camera Roll to be tidy.
