I need to switch to a new Mac, but I won't have it for a while. So I went to copy my files (~ Library/Application Support/Steam/SteamApps) to my back up drive...

And there's nothing there... no "Steam" folder in Application Support to copy.

OSX 10.7.5

Do I just copy the files in my Applications folder?

(I also have a Time Machine back up, but will this work with a different (possible newer) iMac? (mine's early 2010).

If it's just Steam games that you want to back up, then Steam has a built-in backup feature of it's own. Right-click a game from your games list, and choose 'Backup Game Files...'.
This will also compress the produced backups to save space, and can be sent to a custom destination from within the backup wizard itself.
