If I have 300 pics in there and want wipe my phone, so I want those off there. Any easier way than emailing 5 at a time to myself?
 
Once I restore it, can I copy the images back to that folder and they appear in the camera roll?

Hmm, interesting question.

Whenever I've cleared off my phone, I let iPhoto do it's thing - but then my camera pics show up as 'events' on the phone.

Do you _need_ to have those pics in the camera roll, or are folders/events good enough?

I had stated that you could do this, but I needed to get home to make sure. No, you can't copy the images back to the camera roll. You can get them back on your iPhone by syncing, but they won't be in the camera roll.
 
You can copy them back, but they won't appear in the camera roll anymore.
 
My digi cam works this way. I copy files out, but if I put an image back on there, it stores it, but I can't view on the display.
