Currently run a macbook pro (2019) and two dell monitors (U2720Q)

The power goes to the monitors and one of them powers the macbook

Would there be any issues in swapping out the macbook for a studio?

Hopefully a simple question :) But just fearful of spending a lot of money only for the monitors not to work!

The MacBook will be powered via USB-C, you can't power the Mac Studio the same way, it has it's own separate mains power cable.
But apart from that, you should be able to just unplug the display cables from the MacBook Pro and plug them into the Mac Studio, assuming the MBP has the same connections.

Considering I run three Dell 27's on a MacBook Air with a pluggable, you can easily run them on a Studio. Buy a 3rd monitor and you will be even more productive:
