I’ve done this before but it was many years ago, several OSes ago and before 5,1. My 2TB OS Drive is getting very full. My iTunes library is fairly big. I’m thinking of offloading it to another drive, either internal in another bay or external. Any gotchas? Anything I should be concerned about? Any reason not to?

easy to do, apple has instructions specifically for it. The only thing, is some functions, like selecting songs and changing anything about then (right clicking etc) can become as slow as the spin-up and read speed of your drive.
 
It works without any problem. Just copy (just to have a backup if it is not working) it to the external drive. Then start iTunes with presed ALT Key and chose the new folder. Ready.
Then you can delete the old library.
