Pretty sure I can just plug in and let them copy over, but just want to be sure nothing has changed with the OS - it's been a little while since I've moved photos from phone to Mac and that was likely back when I was still syncing my phone.

I'm sorry for all the stupid questions - just trying to refamiliarize myself with all this.
 
You synch with finder now rather than iTunes. Process appears to be the same. But all of my iPhone and iPad photos were already on iCloud to start with, so really synched up already.

My own challenges with the new consolidating photos on the new iMac were in moving photos from my old iMac that were not on iCloud or the mobile devices. That took some manual copy/pastes/deletes etc using backup drives because my old machine kept giving errors with migration assistant. But it's nice to see 10+ yrs show up in my photos stream again.

It is also possible to copy photos to the iMac (or other devices and users) by AirDrop.

I use airdrop to copy photos from the phone to my iMac, it's urpriingly fast ... it put them into you Downloads folder ...
