With the proper settings (2-pass, enough bitrate) it will look like a DVD on a 73-inch screen.
I don't know what that looks like though, but I can imagine that it must look almost awful due to the size of the screen and the resolution it offers (1080p).

Good to hear, I just imagine it horrible, as even on my 17" with 1920x1200 pixel DVDs look a bit dated pixelated (in full screen), so the 73" must do wonders I assume.
Have a look at MRoogle for plenty of those DVD to .avi/.mp4 threads.
Funny. DVD on my 100" screen is tolerable with a good upscaling player whereas HD DVD and Blu-ray are amazing.
Encode your DVDs using the Apple TV preset in HandBrake and you're pretty much set and they should look as good on your screen as the original DVD. I tend to do my encodes as two-pass 1.5Mb H.264 loose anamorphic widescreen so they play well on my ATV and also work on my iPod 5G. This setting looks as good as the SD rentals from the iTunes store and keeps the files reasonably small (1.5GB for a typical two hour film).

I have 90" with my Mac mini outputing ripped DVD or MP4 thru FrontRow. I don't have any problem on the quality at all.
The quality of the video may depend on a number of things, the original video source is one thing, the projector and the screen are another things plus the HDMI cable. (Here I assume u are using a projector since u are having a 73" screen. )

Actualy its a 73" Mitsubiti DLP not a projector. Since these are standard def dvd's I'm using the red, blue, green componant instead of HDMI with standard dvd's I coudn't tell the difference with HDMI and componant. I haven't bothered to get a blue ray player yet. When I do I have plenty of HDMI inputs that aren't being used.
If you think DVDs look good on a 73" TV, you will lose your lunch (in a good way) when you see a Bluray! Now that I have Blurays, I almost cant tolerate DVDs anymore. I try my hardest to get something on Bluray first, if not then I might settle for the DVD.
Ive been ripping DVDs to MP4s for playback on my PS3 and the quality looks the same as the source. I too use GreatDrok's recommended settings for DVD rips. Although I use a slightly higher file size. Either way, Handbrake will get you what you want.
I don't care about file size. I ultlimately would not care if the newly transcoaded file size was still as large as the orignal source dvd. When I fill up one 4T terraserver I will get another one. As long as they make gigibit switches and multi-terrabyte NAS devices I will never run out of space!

That's a rear projection TV then. Even still DVDs are only 480i or 480p. I find that DVDs are not great on a 32" screen; I'm not sure how you consider the quality great on a larger screen. It's being pixelated to death.
There must be something that I am not understanding then because i don't get any pixilation at all. Whether I am watching a dvd or a standard def tv show. The dvd's do look better than the standard Tv and my favorite high def shows put them all to shame. The standard def stuff looks as good as standard def can.That's a rear projection TV then.
