I think you'll need Quicktime Pro and the Quicktime MPEG-2 plugin, both available from Apple. If I remember correctly, OSEx rips to MPEG-2 video and AC3 audio, so you need the Quicktime MPEG-2 plugin to import the video into Quicktime, another app to convert the audio to AIFF, WAV, or MP3 (Quicktime can't handle AC3), and then Quicktime Pro to recombine the video and audio streams and output to whatever format you want. You may have to tweak it a bit to get audio and video to sync correctly. Quicktime can also output the video stream to DV, so you can play with the ripped video in iMovie.
