I have purchased a used MSI RX 560

Tried multiple cables and multiple monitors and even installed fresh OS on a spare drive.
At times the DVI connection shows pink.
Is that a common issue for AMD cards?

I had the exact same issue with mine, it’s common. I don’t remember exactly but it’s something about the DVI connection. I ended up using 2 DP-to-HDMI adapters for my monitors.
 
I experienced this with a Dell U2410 connected over HDMI. If I set my monitor to Input Color Format RGB, I also had a pink display. Switching my monitor to YPbPr turned the screen back to normal. This was with a Macbook Pro 2016 however, but the same could also be happening with your MacPro
