sorry for the delay Work has kept me seriously busy this week.
Ok in Illustrator:
Select File > Document Setup. Set the document to the size you need
(ie, if you want a 2 page 8.5x11 set the specs to 11x17, 3 pages would be 11x25, and so forth)
Next go into print dialog box Command+P
Select
Printer: Adobe Postscript file
PPD: Adobe PPD
(if you don't have this PPD get it from
Adobe it's Free)
In the General box:
Media
Select the settings you need. For 8.5x11 Select Letter in the Size Box.
Options
Make sure to select Do not Scale
Click on Setup on the left.
Options:
Select Tile Full Pages in the Tiling drop down box.
Thats it press Done or Save Depending on your need
When your done and made your PS file right click or Command click on it and select open in>Preview.
Once Open in PDF Select File>Save As... Select PDF.

Or much faster way:
in Finder Select your AI file right click or Command click on it and select open in>Preview.
Once Open in PDF Select File>Save As... Select PDF.
do this for all the files you want in your PDF.
In Automator create your workflow. In this order:
1. Finder>Get Selected Finder Items
2. PDF>Combine PDF Pages
3. Open Finder Items (choose open with: Preview)
Click File > Save As Plug-in yada yada you got a control-clickable action to combine your pdf files.
The PDF will open you can then save it.
