I currently have 2 monitors running on a pc, but will have an iMac at the end of this week. I noticed that there are no direct monitor hook ups on the back of the iMac. Can I connect the monitors through usb to the iMac. Also, I would like to keep both so if it is possible can you connect more than just 1 extra to the iMac?

You can also get Gefen USB to DVI adapter and connect up to six monitors, at least according to their add.
 
Is it possible to connect two 23'' cinemas and position them one on each side of the imac?

(side note: I hope apple updates the cinemas an makes them available with a stand that is either asjustable for imac height or even someone should sell an aftermarket stand to replace the stock cinema one)

No, its not possible. Unless you use one of those USB DVI things that have aweful performance. For iMacs, its probably better to go for the Dell monitors, particularly the 24" one to go with the 24" iMac. I'm pretty sure they have adjustable height stands and 24" matches 24" better than 23" does.
 
i am running a 24" dell 2407 Wide sreen along side my 24" imac. It's pretty sweet setup.

I'm really jonesing for a 23'' display for my 24''
(however I just bought a MBP, so spending more money would be an issue with the misses)

i am running a 24" dell 2407 Wide sreen along side my 24" imac. It's pretty sweet setup.
