Nope, not unless you jailbreak. I think you also have to JB to get an app that'll count letters (but I'm not totally sure...I remember seeing someone ask about that the other day, so search for it).

Use background for multitasking. I use iRealQuickSMS (I bought it) and it counts characters in quicksend.
