1) Swiftkey 3
Well since we are always typing something on our phones, Swiftkey for me is a must have keyboard. There are other nice keyboards, I never really had a problem with the stock. But when more than a few users referred me to Swiftkey I gave it a go. In my opinion THE BEST keyboard on any phone I've ever used. I see why it keeps winning App of the year at the Global Mobile Awards.

2)PlayerPro Music Player
The other app I would say is a must have is, PlayerPro Music Player. Again, I had no issues with Google's Music Player or the stock player. This was just another app that came highly recommended, and it's wicked. The 3 things that I really love about this player is that it has a bunch of different sized home screen widgets to fityour custom home screen space. It also has a great lock screen widget so you don't have to go into your phone to change music. The third standout feature I love with this player is the ability to edit ID3 tags right from the player itself. Very handy when a buddy beams you some music or you download a song that doesn't have correct tags. Now those are only 3 that I really enjoyed having, but it will also download all your artwork for you if you chose (or use your own embedded art), lots of skins for customization, and also grab lyrics for you.
