I have a 3G bought in July/Aug '08 and just started having issues with the iPod on my phone. I've been using brand X head phones and an aux input for the car. Lately, the sound has only played through the car's right speakers and my headphones right side. HELP! I baby my phone no more/less than everyone here and nothing has happened lately. I can't figure out what the issue is :(

I just tried playing apps and I have the same issue. I also just plugged my headphones into my MacBook and they work great! By playing with my headphone or aux wires while connected to my phone sound will temporarily come out of both sides BUT the volume is extremely LOW (even with the volume turned all the way up).

I'm approx 75% positive I had this problem prior to 3.1
 
I have a similar problem with a third party remote (iJet) I use when on my motorcycle. The phone complains that it's not compatible and would i like to airplane mode. If my head phones are in headphone jack the sound is muffled but if i un-plug the head phones then re-plug them in they sound normal. Today a new problem with this device happened. I unplugged the remote and tried making a phone call the headphones were also disconnected. The phone would run in speaker phone mode I couldn't hear the party on the other side when i put the phone up to my ear (I had no idea it was stuck on speaker phone). When I tried turnning off the speaker phone the phone would automatically turn it back on. To fix it i put the headphones back in and the removed them right away i was able to use the phone normally.
 
Yeah, I tried the pull out put back in technique but I'm not sure that it's working. I think something could have gotten inside of the jack. :(
 
I too was thinking this morning when this was happening that I hope it doesn't stay in speaker mode. I might just stop using the accessory even though it's a great little remote.
