After waiting for 11.2 I find that under Software Update I cannot Download and Install due to that function being grayed out.

Also, I see that the Settings icon on my home screen no longer has the red flag in the upper right hand corner.

Is that connected to the Download and Installed to be grayed out?

Your phone either needs to be plugged in to power or have at least 50% battery in order to install the update.
 
Do You have enough space (it would notify you)?

Have you tried hard reset?
 
Well, that was odd. When I returned to my phone to check for WiFi the grey was gone and I was able to start the download. It is now installing.

I can only say that "I didn't change anything!" this morning. And I tried several times yesterday.

Maybe your wifi got disabled through the control center at some point yesterday. Wifi and bluetooth re-enable each morning. Glad all is working now.
