Hey, I don't have a new iPhone but the first one with iOS 3.

In iOS 5, when writing a text message in landscape orientation,
does it also always show the recipient and leave just 2 line heights for viewing the text?

I find this quite annoying.

Yes - when the keyboard is displayed. That's just a limitation of the screen height. If the keyboard was smaller it would be useless to type in landscape orientation.

thanks for telling me.
IMHO this sucks. I don't need to see the name of the one I'm writing all the time.

In ios 5 you can hold down between the text field and text bubbles while typing and pull it down so you can look at the text message.
