I first just want to ask that everyone please be patient and forgive me because I don't know anything about this type of app. Aside from it requires 3-way calling which I don't know anything about either. Please don't worry, I've looked into federal and my state laws, both are one-party consent laws. That said, I need help as quickly as possible since I don't know enough to know whether or not this is normal :(

I've used Rev Call Recorder a week now and liked it the first time using it. Several times since only the phone number to the 'recorder' is in my phones call log and not both phone numbers like the first time. I used it the exact same way, thought it could be a bug and contacted support but it got me nowhere. This doesn't make sense in my head and really bugs me.

Does anyone know if that's normal with this type of app or 3-way calling?

I have never used that app. The behavior you described could make the recording in admissible in court, unless the identity of the caller is verbally made doing the call etc.,

Many apps like this one are not really privacy friendly. By that I mean that any conversation you record with their app is stored on their servers, which could be a problem should it be confiscated by strangers. In addition, many of the apps charge a lot for the service.

I suggest trying another app.
