It is not possible to guess whether your individual machine will have problems or not.
If you install sufficient RAM ( I recommend the full 2 Gb for professional graphics) then there is no reason for the machine to slow down when you have both Illustrator and Photoshop open.
The Adobe programs run acceptably fast now on the intel Macs, when the next upgrade comes with Universal Binary code, then they will run much faster.
I don't know about battery life on the MBP> it depends greatly on how you are using the machine. High processor activity and high disk usage of course will make any battery run down much faster. My impression is that the MBP is as good as best of Windows notebooks in battery life.
However, if you are doing professional work, I would always recommend that you have it plugged into AC, for 2 reasons.
1) You don't want the machine to scale down processor speed as it will if it is on battery power and conserving power
2) You don't want the machine to go to sleep on you when you are working because of running low on battery. If you are playing a game or browsing, its not so bad if the computer shuts down, but if you are working professionally, it would be bad. So use AC power for work.
