I want to use X-Code 7.3.1 on El Capitan. I need good documentation for that version of X-Code ... help please!

You might get lucky and find an ebook or pdf for that particular version, but your best bet would be to use Xcode's built-in help and the release notes.

Alternatively, if you're just looking to start iOS/macOS development then maybe try one of the tutorials over at Ray Wenderlich. For example:

Sometimes, having someone show you the ropes can be more helpful than ploughing through dry documentation... although there's a place for that too. ;-)
