Well, tried syncing my old Mac Pro with the Mac Pro 7,1 using the migration assistant and a Time Machine backup from the El Capitan system and a USB disk which left the machine non functional so ended up having to reinstall Catalina on 7,1 overnight. it is back up. In talking with Apple about all this they said it should have worked...

I have a 4TB disk on the old MP that holds my current photo projects on it. I have logged into the 7,1 over my router from the old MP I can see the 6TB disk on the MP 7,1. I copied the disk contents on the old one and then pasted the files into the new 6TB disk, it has been copying for a couple hours so far and only transferred 165GB of over 2TB, this is pretty slow performance... Most likely it is the performance of the Pegasus J2i and the SATA connections....

You are limited by your router switch throughput, cables, gigabit network connection and disk performance of your old Mac Pro, not by the 10Gb ethernet connection of your MP7,1.

I did this same transfer with my PC and it is transferred much faster, same network and router. Cant quite remember how long it took, but not more than a few hours..

Irrelevant. It wasn't the same computers and not the same operating systems.

Doesn't the J2i accept two drives? I'd take the 4TB from the old Mac Pro and put it in the new one, at least to copy. The time it takes to move the drive will more than pay off in copy speed.
 
The J2i does indeed accept two drives, it comes with a plastic thingy that you remove to add the second drive. I agree it would more than likely be much faster. I run two drives on the old MP one for photos and one for video. On the MP it also has two drives to mimic the setup of the old MP. I guess I will just live with the transfer speed..
