I'm looking for a utility that sniffs ports on my local machine and reports activity on any port number, in or out. Any one know I tool that well do that. Run sctrict firewall rules and need to know what ports some applications talk on so I can open the firewall up for them. They are on non-standard ports.
 
I am not sure about this, but I think you are looking for a NIDS, Network Intrusion Detection System to monitor all of your incoming and outgoing packets. There is an opensource project called Snort, but it is command line only, but there is a graphical interface called HenWen(freeware) for Mac OS X that is Snort, just graphical, here is the link:

Also, you could try Little Snitch, it is shareware, but it is good from what I hear, take a look:
