I can't stand it, and just like with the last time they updated itunes, I need to find out how to be able to use the search function as it previously functioned.

In this latest version you put in a word to search, and it shows results in a separate almost picture-like results screen. I have tens of thousands of songs, some of which have ever-so-slightly different duplicate versions, and without being able to see all the extra details on them (bitrate, size, date added) I can't tell which is which.

Do you all know if a. there is a way to fix this and revert to the old functionality? Or b. is there anyway to keep the old itunes software in Catalina?

I've used iTunes 10.4.11 in Mojave, but decided against updating in the end; don't like new disk format.
Have not tried earlier iTunes on Catalina, but there are "how to" threads here for at least High Sierra.
