Hi, I'm Max from Rome and I'm here for ask help to setup my new iMac (sorry for my English...)

I've decided to take the 27' upgradable to 64GB
Initially I want to take the i7/580/SSD512/32GB but, after read many post about some "problems" to fan and heat of CPU and GPU, my decision is for i5/575/SSD512/16GB (RAM upgrade later with other 16GB)

Generally I have normally use of pc, with some editing video from iphone 4k camera's and editing RAW files (photo of vacancy)
No game's

I save about 900 euros and have a quieter system
Now I have a MacBook Pro Late 2013 with i5 2,4/8RAM/Intel Irisis 1536/SSD256
I hope this passage is evident in speed and usability

Do you recommend this setup?

I'm going with i7 and 1TB. I think that people are overreacting and there is no noise problem with i7. See DetroitBorg's review of 27'' iMac from 2017 with i7 - he says, that system is quiet and there is no problem with fan noise.

I recommend you buy the i5/575 with SSD and 8 GB RAM, and then buy another 16 GB RAM from somewhere else, for a total of 24 GB. It may actually be cheaper than getting 16 GB from Apple.

I returned my i7-7700K / 580 after a week because of fan noise, and bought an i5-7600 / 575.

No games here though either.

Your plan sounds good.
The configuration you stated sounds like a good balance between price and speed.
Quieter, too.
