The xeons in the mac pros don't need the 1333mhz ram, because they already provide triple channel memory bandwidth, compared to the dual channel memory bandwidth of the 1333mhz iMac memory.
Intel used 1333mhz memory controller on lynnfields so their max memory bandwidth can be close to bloomfield and westmere's max memory bandwidth. There are some bloomfields and xeons that support 1333mhz memory, but they are 1000-1500usd per chip.
For you, the consumer, you won't notice the difference between dual channel 1066 and dual channel 1333 bandwidth anyways.
