I have just purchased a new IPhone and want to get Apple Pay set up. What happens to the information that was on the IPhone I came from? Will that information still be there if I switch out sims between phones. Both phones are sim free models. Does it matter how many times you call your bank to verify cards for Apple Pay?

Nothing will happen to your previous Apple Pay until you reset the previous device. The Apple Pay registration is connected to the device ID chip in the phone so each phone (device) will have Apple Pay setup to work on its own. Your bank will not limit the number of times you add a card nor the number of devices its setup on. The only restriction is that you setup Apple Pay with the correct info each time.
 
Called bank yesterday morning and after being asked a few security questions it was verified on my phone and watch in seconds. Very easy!!!
