I am awaiting the arrival of a new MacBook Pro M4 Pro 512gb, and in the process will be decommissioning my very broken Dell XPS 15 laptop. But I think I will take out the hard drive, a 1TB NVMe. I see it as reported as 86% health left or whatever.

I already use an external HDD for my photo library, and a 2TB SSD for my lightroom catalog + "recent photos" that I'm working on.

I could consider switching usage of the SSD to the NVMe, but it's 1TB smaller and from what I'm seeing, the speed difference between the two, WHEN USED BY LIGHTROOM, is basically nothing.

Any ideas what I could use the 1TB drive for, within the confines of new-to-Mac or photo workflow?

Get an nvme to USB adaptor and use it as a backup drive. I have 3 of these and they're very handy and work great
