Ok I am looking at one of the new Mac Mini's for my home theatre
I want to go HDMI into my AMP for when I wanna do the Big Boom Stuff for 5.1
But when I am just chilling watching podcasts and TV shows from downloads etc I want to just go out mini Display to DVI and Stereo out
now will it auto switch to HDMI when I have the amp going or will I have to switch audio outputs?
 
You'll have to switch. I have 3 audio outputs on my setup. :) HDMI to TV, digital audio out to my 5.1, and I bought a $9 USB sound card to plug headphones into if I want to listen when in front of the mini (I have it plugged into my computer display also). Otherwise I'd have to unplug the optical out whenever I wanted to use headphones, so this was easier.

Just hope it can be like the apple tv and auto detect if I am on my dvi input watching just on my tv and then if I am on my amp for 5.1 auto switch to hdmi
 
there is no auto-detect. you have to manually select which device to output the sound on, either hdmi or headphone jack. you can either set this in the sound preferences or use some third-party app that sits in the menubar.
