I was wondering what software people install on their new Lion mac-minis for home theatre use? My new 2011 Mac Mini so far has installed on it:

Flip4Mac
Perian
VLC 64bit
Handbrake
HotSpotShield (for streaming Netflix and TV shows outside of the US)
Vuze
DropBox
Flash Safari PlugIn
Silverlight Safari PlugIn
Adobe Air

I don't use media center software such as Boxee.
 
Even though you don't use media center software, I would still recommend trying out Plex as the Plex Media Server can transcode and stream to your iPhone and iPad very nicely around the house.

For controlling the Mac mini, I would try RemoteBuddy if you have the Apple Remote and it's on sale at the moment for 16 euros. Also, Air Mouse for the iPad is great addition. I found the iPhone version too small to be useful for typing.
