Hi proud owner of the m1 MacBook Air just was wondering if it is possible to transfer the apps etc from my phone over to the MacBook. As I don't really want to have to download them all again. If it is possible how do I go about doing so. Many thanks in advance. First MacBook so don't have a clue about anything.

Unfortunately no. It was possible earlier on, but that was patched out. While you can airdrop or iCloud files, you can no longer transfer apps.

Thats a shame what would be the best way you would recommend to get my apps over to the air from my phone?

Not all iOS apps will be available on macOS. Even the M1/Apple Silicon Macs no longer support running arbitrary iOS apps.
iOS apps that are available will be available on the App Store.
Apps you want outside of the App Store you can either download from their website or use a package manager like homebrew for.
