New macpro or latest verion of the old one?

Worth is subjective, you can run all those apps very nicely on a rMBP, infact I run PS, LR (and Aperture) on my rMBP.
It all depends on what you're willing to spend, the oMP can be had for a lot less money but lacks the design and components of the nMP.

My point though is, if you have the money and desire go for it. If you're hesitant to spend that much money, then there may be other tools that will handle your workflow.

Just a consideration, if either machine is unsuitable then you would be able to sell the nMP almost instantly but I think you may find selling the older model harder and harder as times moves on.
If you move to a 4,1 or a 5,1 you'd be able use any disks, pci-e cards, etc that you have in the 1,1 now.
You would still have access to an extremely wide choice of graphics cards at a very wide choice of budgets - see what a fast graphics card will do to Lightroom or Aperture in a 1,1, it really is quite astonishing.
You would be able to have 4 hds, and 2 optical drives within the case - as now. Unlike the nMP which needs it daisy chaining outside the case.
Else if you want to do cheaper, the Mac Mini is due a refresh so that may be worth considering?

I recently went with a refurb 5.1 w/Applecare and moved components over from my 3.1, easier upgrade path in my case instead of having to purchase all new external peripherals. Maybe as these components start breaking down I'll migrate over to external's and be ready in my next upgrade.
Besides, if someone breaks into my place and wants to steal my Mac Pro that person will have to break a sweat and haul it down three levels of stairs.
