Any ideas as to what the problem is here?

The headphone out and HDMI cable both show up as options, but it won't let me change it from the headphone out.

(and yes, the cable supports audio)

Do you have speakers or headphones plugged into the headphone jack?

I had a similar problem and had to unplug my speakers to get it to use HDMI audio. Kinda stupid IMO, but not sure why it happens.
 
I am also having this issue.....

New base Mac Mini....I have HDMI out to my LG HDTV and audio out to an old Audio Research. I like running music out to the amp, but Hulu, Netfix etc to the HDTV. Unfortunately...it's the amp or nothing, unless I unplug the audio cable. Makes no sense you can't choose the audio output.

I know this thread is old, but has anyone come up with a fix for this as my Late 2012 Mac Mini is having the same issue, it's connected to HDMI to use with the TV but the 3.5mm output jack is also connected to some speakers, if I have the speakers plugged in it won't let me select the HDMI output.

Will have to think about that, will have to weigh up having separate USB device as opposed to just pulling the jack out. Doesn't make sense
