I just got ATV set up this past week and am loving it. I have one issue though I haven't found a solution to.

On my PC, I store all of my photos in my "My Photos" library, and all of my videos in my "My Videos" library.

In iTunes, I have set up home sharing, and where it asks me to select the folder I want to share, I have selected "My Photos". Since it only allows me to select ONE library, is there an equivalent way to home share the videos on my PC which are located in my "My Videos" library? Or must I change this every time I want to view videos?

Thanks!

Your videos have to be loaded into iTunes themselves. The AppleTV reads the XML files from inside of iTunes do display on the screen. Set your preferences in iTunes to not copy new files. Then drag and drop your videos folder into iTunes.
