I recently jailbroke my 4s and seems like the phone is a lot more unstable. For example: listening to music and a text will come in and both the music and text apps will crash, same goes if I open up an email. The phone also seems to be a lot more laggy.
Does anyone have any suggestions?

Jailbreaking won't make it laggy or crash, installing certain apps or tweaks will, or it's a stability issue with iOS itself.

So the problems I am having is from a certain tweak that i downloaded?

No, only 3-4. Changed my lock screen, changed my icons, changed where I can customize the name of my service provider and thats it. I downloaded winterboard as well
 
While installing numerous tweaks will slow down your device, there are things you can do to speed it back up, such as this:

And using the 'free up memory' function in sbsettings, as well as a tweak called Auto App Killer that frees up ram automatically.

If you really want a performance boost and are not afraid of doing a potentially dangerous hack, you can try dynamic_pager to create virtual ram:

Download a tweak called Springtomize 2. It should allow you to do everything you listed above. If Springtomize 2 can do what a tweak you already have installed does, delete the aforementioned tweak. I doubt it's as stable as Springtomize.
