One of the digs at Marzipan apps is that the examples in Mojave, like News and the Home app, look and act a little different from normal Mac apps.

Did this improve with Catalina? Do those apps look more refined now? How did they change, or did they?

Not significantly. They're still junk.

The Podcast app is built with Catalyst though, and that's much better, so maybe we should accept these apps in particular just have hopeless development teams.

They're still terrible. However, the new Podcast app (based on Catalyst) is great and looks Mac-like, almost identical to the new Music app (based on AppKit). So it's not a problem with Marzipan/Catalyst.
