I have just restored my iPhone in iTunes and there is no Carrier name next to the signal bars. The signal bars are there and so is the GPRS icon but there is no carrier name. Any ideas how i would get it back?

Edit: Sorry forgot to say it had been jailbroken before i restored it.
 
Did you use an official carrier sim card? If so, jb again without checking the "activate phone" option.

I'd say Restore again and set-up as new phone instead from restoring from back-up. Restoring from bak-up brings problems back again if you did a restore due to issues.

Also, try out MakeItMine, its a jailbreak app that lets you change Carrier names.
