Whenever I get new mail on iPhone 12 or iPad mini 5 I do not hear the mail ding sound. Why? Yes settings are set correctly and I think this is a bug.
 
If all your settings are correct (choice of sound, ringers and alerts volume ok) then there's the possibility of corruption (a settings file or preference).

Did you happen to restore both of these devices from the same backup?

No I do not. Not sure where the problem is.
 
I've seen notification sound issues on a single device and others here have experienced it, also. In my case the only fix was a restore as new and not restoring from a backup. A restore from backup brought the problem back.

Two devices with the same issue? I was thinking if they came from the same backup maybe that's the connection between the two.

I don't know if some sort of corruption in an iCloud Keychain sync could cause two devices to have the same problem. Is iCloud Keychain syncing ON for both?

In reading this, I realized that neither my 12 Pro nor my iPad Pro (both on 15.3) were dinging for new mail. I guess I never missed it. I did a little research, and found this article, with a suggested fix. It worked for me, on both devices!
