When iOS password 18 app enters a unique password for a website it does not contain a symbol. This can’t be right and some sites are not accepting it. The only symbol is a dash. is there a setting that I should use to set it up so that symbols are created? By symbols, I mean (,) $ # and others like that.

Don't think you can. And that's by design.

EDIT: or maybe can. See below. I always use a third-party app to generate my passwords and it has a lot more control over how long, what, editing in special chars.

It‘s always been like this and you have to choose the custom option before saving the password. I frequently run into the same thing on sites that require more than a hyphen. Several versions before you had no choice but to either use the offered one or reject it and create your own. Now you can customize it.
