Mostly due to the fact that everyone feels Apple will be resolving this soon, no one wants to step up and start doing anything about it in the meantime. As of right now, its clearly known that when you sync your notes on the iPhone, it gets backed up into a SQLite3 database that then sits on your computer's hard drive. If you were able to edit this database, you could concievably "sync" your notes from other areas, etc, etc. Someone could write a small application that let's you edit this on your computer... but again, this could all be made a moot point tomorrow, and it would be a wasted effort.
Despite nightcap's comments, the email suggestion is a good one... but you can take it a step further. If you're using Yahoo, anything you save it there will be available on your phone later, without sending it to yourself or anything... just keep resaving the draft. You can even create new folders, and those folders will appear in your Yahoo mail on the iPhone too. Very easy, rich formatting, etc, etc. Try it out. You can make a list of "NOTES" and those notes will always be available in your iPhone, even without syncing. If you don't want it thinking you're trying to compose it everytime you open it, you can drag it out of drafts into another folder, to make it "read only". If you need to edit it again, drag it back into the drafts folder.
I'd suggest Google notebook, but its got spotty Safari support right now.
