Hi, I have an early 2009 Mac Pro which I flashed to 5,1 in the belief that it would enable me to put audio out over HDMI. I then found out that my card (geforce gt 120) would not allow audio out over HDMI.

I had almost accepted that I would just have to make do with optical out for my new sound system until I saw it is possible to install non-EFI nvidia cards very easily. I am now trying to figure out if any of the nvidia cards will give me audio out over HDMI or are there no drivers for this? Any help would be very much appreciated.

Last I checked, this didn't work with any Nvidia card and most AMD cards. You specifically need a 5770 or 5870 with EFI, either straight from Apple or a flashed PC card.

Alternatively, you can get an optical+DVI adapter for about $40 that combines into an HDMI output and use any graphics card you want.

As stated, a flashed 5870 will have an HDMI port with working Audio in a 5,1 or later Mac Pro. I don't recall if I tested with a flashed 5770 but it stands to reason that it would work.
