Hello, I have an iPhone 6s+. It has happened many times that when I used my thumb to wake up the phone, I saw notifications but they disappeared so quickly that I cannot read them. Is there anywhere else that I can see a list of notifications?

Not fast enough to read notifications

Swipe down from the top of the screen to access the notification centre, if you're in the today view just tap on notifications 
If you don't want to unlock the phone and just check notifications you can use an unregistered finger, or position your finger so that the tip or side is used to press the home button and won't be recognized to unlock the phone, or alternatively you can press the lock/sleep button and that would turn the screen on (or off it's already on).
