If I have too many items on the menu bar, they are being removed by the NotchBook Pro. How can I force items on the right side of the menu bar to extend to the left side of the notch, rather than cutting it off?

You need Bartender 4, which will give you a submenu. Works great. I've used Bartender on my laptop screen since version 1. You can pick the stuff you want as showing all the time, and then click for the rest or assign a keyboard shortcut key to something.
