I want to clean up my Notes app and take a few hundred notes out of it but save them in case I need them in the future? Is this possible. The main thing is I don't want someone to be able to see them in rare instance they are in my phone. I guess I could lock each one. With that, seems they have to be done one by one.

I agree that locking them might be best, however,with a few hundred to do, it could get tedious one at a time.
Haven't done this, but a quick search shows these 2 different methods to export notes and then you could just delete them from your phone. Of course, they'd also be gone from iCloud, but you'd have the exported versions on your desktop machine.

iMazing does a good job of exporting Notes.

Shortcuts app. Can put together a Shortcut to take as input Notes and then export as RTF or PDF. Make the Shortcut(s) available in the Share Sheet, select multiple Notes, Share...
