I kept searching for more info on this but I found nothing.

In my Settings/iCloud - Notes are off. I didn't make a @me.com email address. Still I did some testing yesterday, I completely erased the iphone, and then restored from iCloud. Several times (I did many tests) and each time the Notes were restored back.

One test I did, was to add some new lines in a note, after a new back-up was made. So the new lines were not in that backup.
So as expected, when I restored from that iCloud backup, the new lines from the note were not there. Only the notes in the backup were restored.

Can someone confirm this ?

The backup, as stored in iTunes or iCloud will back up ALL of the data (including notes) on your phone.

iCloud as a service, will sync notes between your devices. That's what you're turning off in the settings.

I still don't get it. What is again the difference between Notes "On" and "Off" ?

In both cases the notes are backed up to iCloud but if Off - the notes will not be synced between multiple devices ?

Yes.

Let's say you own an iPhone and an iPad, if both devices are associated with the same account and the "Notes" feature is set to "ON" in the iCloud menu for both devices, then any notes that you create will be synchronized between those devices.

The backup feature simply backs up most of the content on your device*. Prior to iOS 5.0 you could only store those backups in iTunes - now you can store them in iCloud as well.

Syncing Notes between iPhone 4 and iPad2

I have cloud turned on and new notes are syncing between both iPhone and iPad through iCloud but my old notes on my phone aren't syncing automatically. Is there a way to do this?
