Apple notes formatting is so frustrating.

If I use numbers. And created a 'subline' meaning a point under a numbered line by using tab. It doesn't call the point 'a' it calls it '1'. So the line reads

1. Point 1
1. Point 1a


The second issue is once in subline section under bullets or numbers. I can't delete it to get to a new number line or bullet point line. It just endlessly creates subpoints and you spend all your time trying to figure out the formating vs typing information. How do I fix this?
 
Not sure I am interpreting your post correctly but if I'm understanding it, you might find more success by first laying out your top level list- numbered or bulleted... and then inserting sub-bullets/numbers under some of the bullets with tabs and then highlight and format by whatever bullet type you want. I think I'm reading that you want to make sub-lists while you make top level lists and- while that's probably possible- Notes probably isn't the best tool for that.

Notes is fairly capable this way. However, it may not be up to your specific task. If not, there are other tools that may be better suited for what you need here... like perhaps the free Pages app.

You may find you can "have it your way" in something like Pages and then copy & paste the fully formatted lists into Notes and that might retain the same formatting on paste.

I do see that Notes is very limited with respect to your first point. Pages can do fancy multi-level numbering, but I don't see any way to leverage that to make a nice multi-level list in Notes. If I copy a list formatted that way from Pages into Notes, it messes it up - the labels from Pages become content in the lines in Notes. The copied lines then get the level numbers as you show in your post.

But, I don't understand your second issue. I am able to delete nested lines.
 
Not exactly sure if this is what you aiming for but I typed all the items, made it a numbered list like this:

Then used Format>Indentation on highlighted items to end up with this:

I don't see any options for letters…just numbers, bullets or dashes.
