I have been holding off on updating the iOS on my iPhone 6s because I have a MBP running OS 10.8.5, and my understanding is that with the updated Notes app in iOS 9.3, I will no longer be able to sync my notes with my MBP unless I upgrade my OS to El Capitan. Is this correct? Is there any other way to deal with us other than updating my OS to El Capitan?

You don't have to upgrade your notes on iOS 9 or El Capitan. You choose. https://support.apple.com/en-us/HT204987

Oh right, duh! Thanks for pointing that out! I assume once you upgrade your notes, you can't go back?
