Does it convert hand written text/scribble to typed text?
No, it doesn’t. Have a look at GoodNotes or Notes Plus, for that functionality.
If handwriting-converting-to-type is all you do (so no doodling or sketching), I would recommend Nebo. I just wrote a 3 page tutorial (app. 1000 words) by hand, and exported my scribbles to a nicely formatted .docx file with hardly any corrections.

Thanks fro the info. I have GoodNotes, but couldn't locate the option for converting handwritten to typed text on iPhone, I wonder if this is only on iPad.
Will take a look a look at Nebo.

In order to convert handwriting to typed text, you need to select it.
In order to even see the selection tool on the iPhone, you might need to rotate it into a horizontal position.
But the functionality is right there.

As for Noteshelf 2, I’ve been using it for a day only - and not even in a real life situation but rather fun testing. I need a little more time to “feel” the app.
Comparing all these great apps you mention is very hard, perhaps if you could be more precise to one single area of note taking - I could give it my best to answer you. Really all depends on your personal field of focus.

Sorry I can’t come up with a simple straighforward answer here.
