I have tried every tip I can find on how to restore/reset to factory settings on my iPad. It's plugged into my iMac. I choose Restore. And in the end, I get a 'hello' page that gets me back to the 'install' and 'verifying update' issues I want to do away with.
I want to completely erase this iPad Pro and starts from scratch.

What do I need to do?

There's no reason to look at updates.
Just go into settings, then General, then Reset, and choose Erase All content and Settings.

If you really are stuck at update, and you can't get beyond that - boot to Recovery Mode, and then do a restore while in that mode.
