com.apple.music shows up on my notification settings, but I don’t have Apple Music installed. Anyone have the same?

Just a bug. Wouldn’t worry about it.

Many people are under the impression that when you “delete” a stock app such as Apple Music that it actually deletes the app from your device. This is not true. It simply deletes the app icon from the springboard along with a few other extensions that get disabled. However, the full app is still installed on your phone.

Looks like iOS got confused when deciding to display it in Notification Settings.
 
Have you restarted since deleting the app?
