On my new Xs, whenever I get a notification, I get the app name and the text "Notification" for a couple of seconds before it fills in with the actual message.

The new watch displays notifications properly, immediately.

What's up with that?
 
Hmm, maybe check the settings for notifications. Also, for said application, maybe turn notifications off, and then back on, and see if that helps.

Lastly, did you do a restore as new, or merely a restore?

What's up with that?

It won’t show you the contents of the notification until Face ID recognizes it’s you. This can be changed in settings > notifications > show previews, set to always.
 
It’s a feature not a bug. It hides the contents of the notifications until you unlock with Face ID
